There are tons of recipes out there telling you how to make glazed carrots, but this is my absolute favorite! The flavor is amazing, they are super simple, and they give a gorgeous presentation.

  • Peel the carrots.
  • Saute the carrots. You can cook whole carrots or slice them, depending on your preference and the look you’re going for. Either way, just saute them in coconut oil first.
  • Simmer the carrots until soft. Pour in about 1/2 cup water, then simmer for about 10 minutes, until you can easily pierce the carrots with a fork. After the carrots become tender, you can increase the heat and cook off any excess water.

PRO TIP #1: Cover partially with a lid when simmering, but not completely, because the cooked carrots will become mushy. No thanks!

PRO TIP #2: Check the water occasionally – if it evaporates, the cooked carrots will burn. You can add a bit more if it evaporates before the carrots cook through.

  • Drizzle in the maple syrup, cinnamon and salt. Give it a stir, and you’re ready to dig into your beautiful cinnamon glazed carrots!

  1. In a Dutch oven, melt the coconut oil over medium heat and saute the carrots for 2 minutes.

  2. Add the water which should bubble immediately. Lower the heat to a simmer and partially cover the pot. Cook for about 10 minutes, until fork tender. Check periodically to make sure the water doesn't completely evaporate so the carrots don't burn.

  3. Once the carrots are tender, raise the heat to cook off any excess water, then stir in the maple syrup, cinnamon, and salt. Serve warm.
